Ever aware of the modern health concerns shared by most discerning diners we realised that there was a demand for Indian cuisine that reflected original cooking processes and ingredients.
The chemical colourings, commercial curry pastes, flavour enhancers and preservatives used by so many restaurants and take-away today have no place in our kitchen. Colourings are produced from natural ingredients like beetroot juice, paprika. Ghee has been replaced by cholesterol-friendly vegetable oil and olive oil, the spices and herbs that make up our masalas are mixed, pounded, ground and prepared daily.
